I have made a recent change to my diet. I am going Gluten Free. What's that you might ask? Well Gluten is a special type of protein that is commonly found in rye, wheat and barely. Therefore, it is found in most types of cereals and in many types of bread. Not all foods from the grain family however, contain gluten. Examples of grains that do not have gluten include wild rice, corn, buckwheat, millet, amaranth, quinoa, teff, oats, soybeans and sunflower seeds. Hence I eat nothing! No, I'm kidding. I 'm eating a ton of stuff. Over 20 years ago I was tested as being allergic to wheat so I ate a wheat free diet and if I could do that then, when the choices were limited I can most certainly do it now. The choices are limitless. There is an autoimmune disorder called Celiac disease, it is a digestive condition triggered by the consumption of gluten and it has become more known in the last ten years. And because of it, there are more GF good food options.
Why am I doing this you ask? I have had MS for the last 7 years and fortunately I only deal with extreme fatigue and what's called "brain fog", where I have an extremely hard time concentrating. There have been some studies that Gluten can be a cause of this in other autoimmune disorders, So why not give it a try for 6 months, Right? I already test positive for a wheat allergy. What have I got to loose?
